- 12 oz Udon Noodles
- 1 lb Shrimp, deveined
- 3 tbsp Soy Sauce
- 3 cloves Garlic, minced
- 1 tbsp Ginger, minced
- 4 Green Onions, sliced
- 1 Bell Pepper, chopped
- 2 Carrots, sliced
- 1 cup Broccoli florets
- 2 tbsp Cooking Oil
Instructions
- Cook the Udon: Bring a large pot of salted water to boil and cook the udon noodles according to package instructions. Drain and set aside.
- Sauté Aromatics: Heat the cooking oil in a wok over medium-high, then add garlic and ginger, stirring until fragrant.
- Cook the Shrimp: Toss shrimp into the pan and cook for 2-3 minutes until pink and opaque.
- Add Vegetables: Stir-fry the chopped bell peppers, carrots, and broccoli for 2-4 minutes.
- Combine with Udon: Gently add the cooked udon noodles and soy sauce, tossing to coat and heat through.
- Garnish and Serve: Remove from heat, garnish with green onions, and serve hot.
