Description

A warm and nourishing vegetable soup filled with vibrant vegetables and earthy herbs, perfect for cozy meals.


Ingredients

Scale
  • 2 cups Carrots, chopped
  • 2 cups Celery, chopped
  • 1 large Onion, chopped
  • 2 cups Bell Peppers, chopped
  • 2 tsp Thyme, fresh
  • 2 tbsp Parsley, chopped
  • 2 Bay Leaves
  • 4 cups Broth (vegetable or chicken)
  • Salt, to taste
  • Black Pepper, to taste
  • 1 cup Noodles or Legumes (optional, for heartiness)

Instructions

  1. Chop your veggies into small, uniform pieces.
  2. Heat a splash of olive oil in a large pot over medium heat and sauté the onions until translucent, about 2-3 minutes.
  3. Add the remaining chopped vegetables (carrots, celery, bell peppers) and sauté for an additional 5-7 minutes.
  4. Pour in the broth, scraping the bottom to release flavor bits.
  5. Bring to a gentle boil and add herbs, salt, and pepper.
  6. Reduce heat and simmer for 30 minutes, allowing flavors to meld.
  7. Add optional noodles or legumes during the last 10 minutes of cooking.
  8. Taste and adjust seasoning as necessary.
  9. Serve hot, garnished with fresh parsley.

Notes

This vegetable soup can be made ahead and stored in the fridge for 4 days or frozen for 3 months. Customize with seasonal vegetables as needed.
