Description

A delightful breakfast featuring fluffy baked potatoes stuffed with a creamy filling of eggs, cheese, and crispy bacon.


Ingredients

Scale
  • 4 large baking potatoes (Russet or other starchy types)
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup sour cream
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Olive oil (for drizzling)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake the potatoes directly on the oven rack for 45-60 minutes until tender.
  3. Cool the potatoes for about 10 minutes, cut each in half, and scoop out the insides.
  4. Mix the scooped potato, eggs, cheese, bacon, sour cream, green onions, salt, and pepper in a bowl.
  5. Stuff each potato skin with the filling, packing it carefully.
  6. Drizzle olive oil on top of the stuffed potatoes.
  7. Return them to the oven for another 15-20 minutes until tops are golden.
  8. Serve warm and enjoy!

Notes

Customize with sautéed mushrooms, jalapeños, or fresh herbs as desired.
