Description

Delightful coconut balls bursting with sweet pineapple flavor, perfect for snacks or celebrations.

Ingredients

Scale
  • 1 cup crushed pineapple, drained
  • 1 cup shredded coconut
  • 1/2 cup granulated sugar
  • 1/4 cup crushed nuts (optional)
  • 1/2 cup condensed milk
  • 1 teaspoon vanilla extract

Instructions

  1. Combine ingredients: In a large mixing bowl, introduce the drained crushed pineapple, shredded coconut, granulated sugar, optional crushed nuts, condensed milk, and vanilla extract.
  2. Mix thoroughly: Use a rubber spatula to blend everything together until evenly combined.
  3. Shape the balls: With clean hands, scoop small portions of the mixture and roll them into bite-sized balls, approximately one inch in diameter.
  4. Prepare to chill: Arrange the coconut balls on a parchment-lined tray, leaving space between each one.
  5. Refrigerate: Pop your tray into the refrigerator and let the coconut balls chill for about 60 minutes.
  6. Serve and delight: Remove from the fridge and let them sit at room temperature for a few moments before serving.

Notes

These balls can be made a day in advance and stored in the fridge. For a vegan version, replace condensed milk with coconut cream.
