Description

Delightfully vibrant and refreshingly sweet Tropical Chill Coconut Lime Bars, featuring a creamy coconut filling and zesty lime essence. A perfect treat for summer!


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup coconut cream
  • 1/4 cup fresh lime juice
  • Zest of 1 lime
  • 1 cup shredded coconut (unsweetened or sweetened)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish as a head start.
  2. Combine the graham cracker crumbs, melted butter, and sugar in a mixing bowl. Stir until well combined.
  3. Press the mixture into the bottom of the prepared dish to create an even layer.
  4. In another bowl, whisk together the sweetened condensed milk, coconut cream, lime juice, and lime zest until smooth.
  5. Gently fold in the shredded coconut until just combined.
  6. Pour the filling over the crust, spreading it evenly for consistent baking.
  7. Bake for 20-25 minutes until the edges turn golden brown and the center jiggles slightly.
  8. Cool completely at room temperature, then refrigerate for at least 2 hours.
  9. Slice into squares and serve chilled.

Notes

These bars can be made a day in advance. Optionally, swirl in passion fruit or mango puree for variation.
