- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup coconut cream
- 1/4 cup fresh lime juice
- Zest of 1 lime
- 1 cup shredded coconut (unsweetened or sweetened)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish as a head start.
- Combine the graham cracker crumbs, melted butter, and sugar in a mixing bowl. Stir until well combined.
- Press the mixture into the bottom of the prepared dish to create an even layer.
- In another bowl, whisk together the sweetened condensed milk, coconut cream, lime juice, and lime zest until smooth.
- Gently fold in the shredded coconut until just combined.
- Pour the filling over the crust, spreading it evenly for consistent baking.
- Bake for 20-25 minutes until the edges turn golden brown and the center jiggles slightly.
- Cool completely at room temperature, then refrigerate for at least 2 hours.
- Slice into squares and serve chilled.
Notes
These bars can be made a day in advance. Optionally, swirl in passion fruit or mango puree for variation.
