- 1 pound chicken breast
- 4 bread rolls or baguettes
- 2 tablespoons Thai chili sauce
- 1/4 cup mayonnaise
- 2 cups lettuce (romaine or butter)
- 1 cucumber, thinly sliced
- 1 carrot, shredded
- 1/4 cup fresh herbs (cilantro or basil)
- Salt and pepper, to taste
- 2 tablespoons oil for frying
Instructions
- Season the chicken breast with salt and pepper.
- Cook the chicken in a non-stick skillet with oil over medium-high heat for 5–7 minutes on each side until golden brown.
- Rest the chicken for a few minutes before slicing.
- Combine mayonnaise and Thai chili sauce in a mixing bowl.
- Slice the bread rolls lengthwise and spread the mayonnaise mixture on both sides.
- Layer the sliced chicken, lettuce, cucumber, and shredded carrots in the rolls.
- Top with fresh herbs and close the sandwich.
- Serve immediately and enjoy!
