Description

A vibrant and flavorful dish featuring marinated pork and fresh pineapple, all wrapped in soft corn tortillas.


Ingredients

  • 1 lb Pork Shoulder or Pork Loin
  • 1 cup Fresh Pineapple, chopped
  • 1/2 cup Adobo Sauce
  • 3 cloves Garlic, minced
  • 1 Onion, finely chopped
  • 1/4 cup Cilantro, chopped
  • 1 Lime, juiced
  • 8 Corn Tortillas
  • Salt, to taste
  • Black Pepper, to taste

Instructions

  1. Cut the pork into small pieces and place them in a large mixing bowl. Mix in the adobo sauce, minced garlic, chopped onion, salt, and pepper until the meat is thoroughly coated. Cover the bowl and refrigerate for a few hours or ideally, overnight.
  2. Preheat your grill or grill pan over medium heat.
  3. Thread the marinated pork chunks and pineapple onto skewers, alternating between them.
  4. Place the skewers on the hot grill and cook for about 10-15 minutes, turning occasionally.
  5. Remove the skewers from heat and let the pork rest for a few minutes.
  6. Warm the corn tortillas on the grill for about 30 seconds per side.
  7. Chop the grilled pork and pineapple into bite-sized pieces, and place them onto the warm tortillas.
  8. Top with fresh cilantro and squeeze a lime over the tacos before serving.

Notes

For best results, marinate the pork overnight. You can also substitute pork with tofu or jackfruit for a vegetarian option.
