A vibrant and flavorful dish featuring marinated pork and fresh pineapple, all wrapped in soft corn tortillas.

- 1 lb Pork Shoulder or Pork Loin
- 1 cup Fresh Pineapple, chopped
- 1/2 cup Adobo Sauce
- 3 cloves Garlic, minced
- 1 Onion, finely chopped
- 1/4 cup Cilantro, chopped
- 1 Lime, juiced
- 8 Corn Tortillas
- Salt, to taste
- Black Pepper, to taste
Instructions
- Cut the pork into small pieces and place them in a large mixing bowl. Mix in the adobo sauce, minced garlic, chopped onion, salt, and pepper until the meat is thoroughly coated. Cover the bowl and refrigerate for a few hours or ideally, overnight.
- Preheat your grill or grill pan over medium heat.
- Thread the marinated pork chunks and pineapple onto skewers, alternating between them.
- Place the skewers on the hot grill and cook for about 10-15 minutes, turning occasionally.
- Remove the skewers from heat and let the pork rest for a few minutes.
- Warm the corn tortillas on the grill for about 30 seconds per side.
- Chop the grilled pork and pineapple into bite-sized pieces, and place them onto the warm tortillas.
- Top with fresh cilantro and squeeze a lime over the tacos before serving.
Notes
For best results, marinate the pork overnight. You can also substitute pork with tofu or jackfruit for a vegetarian option.
