- 4 medium potatoes, peeled and diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Chopped green onions for garnish
- Crumbled bacon (optional)
Instructions
- Heat a bit of oil in a large pot over medium heat. Add the chopped onion, garlic, bell pepper, and celery. Sauté for about 5 minutes until the vegetables soften.
- Toss in the diced potatoes, Cajun seasoning, smoked paprika, and pour in the broth. Bring to a boil.
- Lower the heat and let it simmer for about 20 minutes or until the potatoes are tender.
- Use your immersion blender to swirl the soup until mostly smooth, leaving some chunks for texture.
- Stir in the heavy cream and heat for an additional 5 minutes. Adjust seasoning with salt and pepper.
- Serve in bowls, garnished with green onions and crumbled bacon if desired.
Notes
This soup tastes even better the next day! For a smoky flavor, roast the potatoes first or use an air fryer. Customize by adding shrimp or andouille sausage.
