Description

A warm and comforting Spicy Cajun Potato Soup infused with rich flavors and creamy textures, perfect for chilly nights.


Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Crumbled bacon (optional)

Instructions

  1. Heat a bit of oil in a large pot over medium heat. Add the chopped onion, garlic, bell pepper, and celery. Sauté for about 5 minutes until the vegetables soften.
  2. Toss in the diced potatoes, Cajun seasoning, smoked paprika, and pour in the broth. Bring to a boil.
  3. Lower the heat and let it simmer for about 20 minutes or until the potatoes are tender.
  4. Use your immersion blender to swirl the soup until mostly smooth, leaving some chunks for texture.
  5. Stir in the heavy cream and heat for an additional 5 minutes. Adjust seasoning with salt and pepper.
  6. Serve in bowls, garnished with green onions and crumbled bacon if desired.

Notes

This soup tastes even better the next day! For a smoky flavor, roast the potatoes first or use an air fryer. Customize by adding shrimp or andouille sausage.
