Description

A vibrant Shrimp and Avocado Bowl featuring grilled shrimp, creamy avocado, and fresh mango salsa, all layered over a bed of rice for a delicious tropical feast.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cooked rice
  • 1 mango, diced
  • 1/4 red onion, finely chopped
  • 1 lime, juiced
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • Cilantro for garnish

Instructions

  1. Preheat the grill to medium-high heat. Dry the shrimp with a paper towel and season generously with salt, pepper, and chili powder.
  2. Place the shrimp on the grill and cook for about 2-3 minutes on each side until they turn pink and opaque.
  3. While the shrimp grill, prepare the mango salsa by combining diced mango, finely chopped red onion, lime juice, and a pinch of salt in a mixing bowl.
  4. Start assembling the bowl with a scoop of cooked rice as the base, then layer on grilled shrimp, creamy avocado, and mango salsa.
  5. Finish with a drizzle of lime juice and garnish with fresh cilantro.
