- 1 pound baby potatoes, halved
- 2 tablespoons olive oil
- 2 tablespoons lemon juice

- 1 tablespoon Dijon mustard

Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the potatoes by combining halved baby potatoes with olive oil, salt, and pepper. Toss to coat and spread them on a sheet pan, cut-side down.
- Whisk together melted butter, lemon juice, Dijon mustard, and a pinch of salt in a small bowl.
- Arrange the salmon fillets among the potatoes and brush each fillet generously with the lemon butter mixture.
- Bake for 15-20 minutes until the salmon flakes easily and the potatoes are golden brown.
- Garnish with fresh parsley before serving.
Notes
You can prepare the potato and salmon mixtures a day in advance. Use an air fryer for quicker cooking if desired. Avoid overcrowding the pan for the best results.
