Description

A delicious and elegant dish combining tender salmon with crispy roasted potatoes, flavored with lemon and butter.


Ingredients

  • 4 salmon fillets
  • 1 pound baby potatoes, halved
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons butter, melted
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the potatoes by combining halved baby potatoes with olive oil, salt, and pepper. Toss to coat and spread them on a sheet pan, cut-side down.
  3. Whisk together melted butter, lemon juice, Dijon mustard, and a pinch of salt in a small bowl.
  4. Arrange the salmon fillets among the potatoes and brush each fillet generously with the lemon butter mixture.
  5. Bake for 15-20 minutes until the salmon flakes easily and the potatoes are golden brown.
  6. Garnish with fresh parsley before serving.

Notes

You can prepare the potato and salmon mixtures a day in advance. Use an air fryer for quicker cooking if desired. Avoid overcrowding the pan for the best results.
