- 8 oz Wide Lo Mein Noodles (cooked and rinsed)
- 1 tablespoon Peanut Oil
- 1 pound Ground Pork
- 1/4 cup + 2 tablespoons Sliced Green Onions
- 1/2 cup Low-Sodium Chicken Broth
- 3 tablespoons Mirin
- 2 tablespoons Dark Soy Sauce
- 1 tablespoon Minced Garlic
- 2 teaspoons Grated Ginger
- 1 teaspoon Sesame Oil
- 1/2 teaspoon Sriracha
- 4 cups Coleslaw Mix
Instructions
- Cook the Noodles: Boil a large pot of water. Cook the wide Lo Mein noodles according to package instructions until tender, then rinse under cold water. Set them aside to keep warm and prevent sticking.
- Brown the Pork: In a skillet over medium heat, add peanut oil and allow it to warm. Once hot, add the ground pork along with 1/4 cup of the sliced green onions. Sauté until the pork is fully cooked and the edges begin to brown.
- Prepare the Sauce: In a separate bowl, whisk together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha until well combined.
- Combine Ingredients: Add the cooked noodles and coleslaw mix to the skillet. Pour the sauce over the top and toss everything together using tongs for about 2–3 minutes.
- Garnish and Serve: Sprinkle the remaining green onions on top as a garnish and enjoy your bowl while warm.
