Description

A vibrant, fruity dressing that perfectly balances the sweetness of peaches with the tang of Dijon mustard, ideal for salads and grilled dishes.

Ingredients

Scale
  • 2 cups ripe peaches (diced)
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 tablespoon Dijon mustard
  • 1/4 cup balsamic vinegar
  • 1/2 cup extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prep the peaches: Wash and peel your ripe peaches. Dice them into small pieces.
  2. Combine ingredients: In your blender or food processor, add the diced peaches, honey, Dijon mustard, balsamic vinegar, and a pinch of salt and pepper.
  3. Emulsify: Blend on high for about 30 seconds until smooth and creamy.
  4. Incorporate olive oil: With the blender running on low, slowly drizzle in the olive oil.
  5. Taste and adjust: Taste your vinaigrette and add more salt, pepper, or honey if needed.
  6. Chill: Transfer to a jar and refrigerate for at least 30 minutes before serving.

Notes

Store in an airtight container in the fridge for up to one week. Shake well before each use.
