Description

A comforting and aromatic one-pot dish combining tender chicken thighs with fluffy jasmine rice, aromatic spices, and fresh parsley.

  • 2 cups jasmine rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon shawarma spice mix
  • 1 can (14 oz) diced tomatoes
  • 3 cups chicken broth
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté the aromatics: Start by heating the olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking them until they soften, about 3-4 minutes.
  2. Brown the chicken: Season the chicken thighs with the shawarma spice mix, salt, and pepper. Add them to the pot and brown on both sides, approximately five minutes per side.
  3. Combine the goodness: Stir in the jasmine rice, diced tomatoes (with juices), and chicken broth. Bring to a vigorous boil.
  4. Simmer to perfection: Reduce heat to low, cover the pot, and simmer for 20-25 minutes.
  5. Let it rest: Remove from heat and let the dish sit, covered, for an additional 5 minutes.
  6. Fluff and garnish: Use a fork to fluff the rice gently. Garnish with fresh parsley before serving.
