- 2 cups jasmine rice
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon shawarma spice mix
- 1 can (14 oz) diced tomatoes
- 3 cups chicken broth
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Sauté the aromatics: Start by heating the olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking them until they soften, about 3-4 minutes.
- Brown the chicken: Season the chicken thighs with the shawarma spice mix, salt, and pepper. Add them to the pot and brown on both sides, approximately five minutes per side.
- Combine the goodness: Stir in the jasmine rice, diced tomatoes (with juices), and chicken broth. Bring to a vigorous boil.
- Simmer to perfection: Reduce heat to low, cover the pot, and simmer for 20-25 minutes.
- Let it rest: Remove from heat and let the dish sit, covered, for an additional 5 minutes.
- Fluff and garnish: Use a fork to fluff the rice gently. Garnish with fresh parsley before serving.
