- 1 mini watermelon (about 3 to 4 pounds)
- 3 to 4 medium nectarines
- 6 medium cucumbers
- Small bunch of fresh mint
- Small bunch of fresh basil
- 1 1/2 cups cubed feta cheese
- 1 large lemon
- 1/4 cup olive oil
- 1 1/2 tbsp honey
- Ground black pepper & salt (to taste)
- 1/2 tsp poppy seeds (optional)
Instructions
- Begin by trimming both ends of the watermelon, ensuring it sits flat on your cutting board.
- Slice the watermelon in half from top to bottom and cube the flesh into bite-sized pieces.
- Slice the nectarines into wedges and then cut each wedge into sizable pieces.
- Peel and dice your cucumbers and add them into a large mixing bowl with the watermelon and nectarines.
- Chop the fresh mint leaves and basil, sprinkling them over your salad along with the cubed feta.
- In a separate bowl, whisk together lemon juice, olive oil, honey, salt, and black pepper.
- Taste the dressing and adjust seasonings as needed.
- Toss the salad with the dressing until well coated, then sprinkle with poppy seeds if using.
- Serve immediately or let it sit for a few minutes to meld flavors.
Notes
For a sweeter dressing, add more honey. Use chilled ingredients for a fresher taste.
