Description

A refreshing summer salad featuring ripe nectarines, juicy watermelon, and creamy feta cheese, tossed in a tangy dressing.


Ingredients

  • 1 mini watermelon (about 3 to 4 pounds)
  • 3 to 4 medium nectarines
  • 6 medium cucumbers
  • Small bunch of fresh mint
  • Small bunch of fresh basil
  • 1 1/2 cups cubed feta cheese
  • 1 large lemon
  • 1/4 cup olive oil
  • 1 1/2 tbsp honey
  • Ground black pepper & salt (to taste)
  • 1/2 tsp poppy seeds (optional)

Instructions

  1. Begin by trimming both ends of the watermelon, ensuring it sits flat on your cutting board.
  2. Slice the watermelon in half from top to bottom and cube the flesh into bite-sized pieces.
  3. Slice the nectarines into wedges and then cut each wedge into sizable pieces.
  4. Peel and dice your cucumbers and add them into a large mixing bowl with the watermelon and nectarines.
  5. Chop the fresh mint leaves and basil, sprinkling them over your salad along with the cubed feta.
  6. In a separate bowl, whisk together lemon juice, olive oil, honey, salt, and black pepper.
  7. Taste the dressing and adjust seasonings as needed.
  8. Toss the salad with the dressing until well coated, then sprinkle with poppy seeds if using.
  9. Serve immediately or let it sit for a few minutes to meld flavors.

Notes

For a sweeter dressing, add more honey. Use chilled ingredients for a fresher taste.
