Description

A vibrant salad featuring grilled corn, juicy tomatoes, and creamy feta, embodying the flavors of traditional Mexican street corn.


Ingredients

  • 4 ears of corn, husked
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or grill pan to medium heat. Grill the corn for about 10 minutes, turning occasionally until char marks appear.
  2. Allow the corn to cool slightly, then cut the kernels off the cob into a large mixing bowl.
  3. Add the halved cherry tomatoes, diced red onion, chopped cilantro, and crumbled feta cheese to the bowl.
  4. In a separate small bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  5. Pour the dressing over the salad mixture and gently toss until combined.
  6. Serve chilled or at room temperature.

Notes

For added freshness, prepare the salad ahead of time but mix in the dressing just before serving. Leftovers can be stored in an airtight container in the fridge for up to 3-4 days.
