- 1 lb Brussels sprouts, trimmed and halved
- 1/2 cup cotija cheese, crumbled
- 1 tsp chili powder
- 2 tbsp lime juice
- 1/2 cup crema
- 2 tbsp olive oil
- Salt, to taste

Instructions
- Preheat the oven to 400°F (200°C).
- Clean the Brussels sprouts by trimming ends and removing outer leaves, then halve them.
- Drizzle the halved Brussels sprouts with olive oil, then season with salt and pepper.
- Roast in the oven for 20-25 minutes until golden brown and crisp.
- Mix the crema, lime juice, and chili powder in a bowl while the Brussels sprouts roast.
- Toss the roasted Brussels sprouts in the crema mixture to coat.
- Finish by sprinkling cotija cheese over the top while warm.
- Serve warm and enjoy!
