Description

A vibrant dish of roasted Brussels sprouts inspired by the flavors of Mexican street corn, featuring lime, cotija cheese, and chili powder.


Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 1/2 cup cotija cheese, crumbled
  • 1 tsp chili powder
  • 2 tbsp lime juice
  • 1/2 cup crema
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Clean the Brussels sprouts by trimming ends and removing outer leaves, then halve them.
  3. Drizzle the halved Brussels sprouts with olive oil, then season with salt and pepper.
  4. Roast in the oven for 20-25 minutes until golden brown and crisp.
  5. Mix the crema, lime juice, and chili powder in a bowl while the Brussels sprouts roast.
  6. Toss the roasted Brussels sprouts in the crema mixture to coat.
  7. Finish by sprinkling cotija cheese over the top while warm.
  8. Serve warm and enjoy!
