Description

Delicious bites of cheesy mashed potatoes, golden and crunchy on the outside with a warm, fluffy interior.


Ingredients

Scale
  • 2 cups leftover mashed potatoes
  • 2 large eggs
  • 1 cup cheese (cheddar or mozzarella)
  • 1/2 cup all-purpose flour
  • 1/4 cup milk or cream
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Optional: 1/2 tsp garlic powder or chives

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Grease each cup of your muffin tin or popover pan generously.
  3. In a large mixing bowl, combine the leftover mashed potatoes, eggs, and milk. Whisk or mix until smooth and creamy.
  4. Stir in your cheese of choice and any additional seasonings.
  5. Gradually add flour, mixing until just combined.
  6. Fill each muffin tin cup about three-quarters full with the potato mixture.
  7. Bake for 20-25 minutes, or until the tops are golden brown and puffed.
  8. Allow the poppers to cool slightly before gently removing them from the pan.

Notes

For added flavor, sprinkle some extra cheese on top before baking. These poppers can be stored in the fridge for up to three days in an airtight container.
