- 1 can Rotel diced tomatoes and green chilies
- 1 can beans (black or pinto)
- 16 oz Velveeta cheese, cubed
- 1 cup shredded cheese (optional)
- Tortilla chips for serving
Instructions
- Cook the sausage in a skillet over medium heat until browned and fully cooked.
- Add the can of Rotel and beans, stirring to combine.
- Melt the cubed Velveeta cheese into the mixture over low heat, stirring continuously.
- Incorporate the shredded cheese if using, and stir until melted.
- Serve warm with tortilla chips.
