Instructions
- Combine the chia seeds, oat milk, lemon zest, maple syrup, vanilla extract, and sea salt in a mixing bowl. Whisk until smooth.
- Cover the bowl and refrigerate for at least three hours or overnight to allow the chia to swell.
- Soak the cashews in hot water for one hour, then drain and transfer to a high-speed blender.
- Add the remaining oat milk, maple syrup, lemon juice, turmeric, and lemon extract to the blender. Blend until smooth.
- Divide the chilled chia mixture into serving jars, creating a base layer.
- Top each jar with the lemon cream layer.
- Chill the assembled pudding for another three hours before serving.
