Description

Juicy and tender rotisserie chicken made effortlessly in the Instant Pot, with a crispy exterior and robust flavor.


Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 cup chicken broth

Instructions

  1. Pat the chicken dry using paper towels.
  2. Rub with olive oil generously.
  3. Create the spice rub by mixing salt, black pepper, garlic powder, onion powder, paprika, and dried thyme.
  4. Season the chicken with the spice mixture, ensuring even coverage.
  5. Add chicken broth into the Instant Pot.
  6. Place the chicken on the trivet in the pot, breast side up.
  7. Secure the lid and set the valve to sealing.
  8. Cook on high pressure for 28 minutes.
  9. Release pressure after 10 minutes of natural release.
  10. Let the chicken rest before carving.

Notes

For extra crispiness, finish the chicken under a broiler or in an air fryer after cooking.
