Description

Ingredients

  • Juice of 2 limes
  • Salt and pepper to taste
  • 4 boneless, skinless chicken breasts
  • 2 cups jasmine rice
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • 1 cup bell peppers, sliced

Instructions

  1. Whisk together the honey, lime juice, salt, and pepper in a medium bowl. Add the chicken breasts and marinate for at least 30 minutes.
  2. Cook the jasmine rice according to package instructions, adding a squeeze of lime if desired.
  3. Preheat your grill or skillet over medium-high heat and grill the marinated chicken for about 6-7 minutes on each side.
  4. Allow the chicken to rest for 5 minutes before slicing it into strips.
  5. Layer the jasmine rice at the base, then the sliced chicken, avocado, cilantro, and bell peppers.
