Description

Deliciously sweet and savory sweet potato rounds topped with honey and feta, perfect as an appetizer or side dish.


Ingredients

Scale
  • 2 large sweet potatoes
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (thyme or parsley)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice the sweet potatoes into rounds about 1/2 inch thick.
  3. Toss the sweet potato rounds with olive oil, salt, and pepper in a bowl.
  4. Arrange the sweet potato slices on a baking sheet in a single layer.
  5. Roast for about 25-30 minutes, or until tender and slightly golden.
  6. Remove from the oven and drizzle with honey.
  7. Sprinkle crumbled feta cheese over the top.
  8. Return to the oven for an additional 5-10 minutes until the feta is warmed and slightly melted.
  9. Garnish with fresh herbs and serve warm.

Notes

For a vegan option, substitute honey with maple syrup and use plant-based feta. You can make ahead but add honey and feta just before baking.
