- 2 large sweet potatoes
- 1/2 cup feta cheese, crumbled
- 1/4 cup honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (thyme or parsley)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and slice the sweet potatoes into rounds about 1/2 inch thick.
- Toss the sweet potato rounds with olive oil, salt, and pepper in a bowl.
- Arrange the sweet potato slices on a baking sheet in a single layer.
- Roast for about 25-30 minutes, or until tender and slightly golden.
- Remove from the oven and drizzle with honey.
- Sprinkle crumbled feta cheese over the top.
- Return to the oven for an additional 5-10 minutes until the feta is warmed and slightly melted.
- Garnish with fresh herbs and serve warm.
Notes
For a vegan option, substitute honey with maple syrup and use plant-based feta. You can make ahead but add honey and feta just before baking.
