Description

Juicy and flavorful sliders with honey chipotle marinated chicken thighs, topped with a vibrant slaw, served on soft brioche buns.


Ingredients

  • 1.5 lbs boneless skinless chicken thighs (pounded to an even thickness)
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 0.33 cup honey
  • 2 tbsp chipotle peppers in adobo (finely chopped)
  • 0.25 cup ketchup
  • 6 whole soft brioche slider buns
  • 2 tbsp unsalted butter (for toasting buns)
  • 1 cup shredded green cabbage
  • 0.5 cup purple cabbage (thinly sliced)
  • 0.5 cup shredded carrots
  • 0.25 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 0.25 cup mayonnaise (for the slaw)
  • 2 tbsp sour cream
  • 1 tbsp milk
  • 2 cloves garlic (minced)

Instructions

  1. Prepare the Chicken Marinade: In a mixing bowl, combine honey, chipotle peppers, ketchup, olive oil, kosher salt, and black pepper. Whisk until smooth and uniform.
  2. Marinate the Chicken: Place your chicken thighs in a resealable bag, pour the marinade over, seal tightly, and massage the bag. Marinate in the refrigerator for at least 30 minutes or overnight.
  3. Cook the Chicken: Preheat your grill over medium-high heat. Grill the chicken thighs for about 5-7 minutes on each side until cooked through.
  4. Prepare the Slaw: In a bowl, mix together the green and purple cabbage, carrots, minced garlic, mayonnaise, apple cider vinegar, sugar, sour cream, and milk. Toss until well combined.
  5. Toast the Buns: Melt butter in a pan over medium heat. Toast the brioche buns cut-side down until golden and crispy.
  6. Assemble the Sliders: Slice the cooked chicken and layer it onto the toasted buns, heap on the slaw, and top with the other half of the bun.
  7. Serve and Enjoy: Present your sliders with a garnish and prepare for compliments!

Notes

For a lighter version, substitute Greek yogurt for mayonnaise in the slaw. Remember to let the chicken rest after grilling for juiciness.
