Description

A comforting and protein-packed casserole featuring shredded chicken, creamy Greek yogurt, and a blend of cheeses, complemented by spinach and artichokes.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup frozen spinach, thawed and drained
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup Greek yogurt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, drained spinach, chopped artichokes, Greek yogurt, mozzarella cheese, Parmesan cheese, minced garlic, salt, pepper, garlic powder, onion powder, and paprika. Mix until well combined.
  3. Transfer the mixture to a greased casserole dish and spread it evenly.
  4. Bake in the preheated oven for 25-30 minutes until bubbly and golden.
  5. Allow to cool slightly before serving.

Notes

Make-ahead tip: Prepare the casserole a day in advance and refrigerate. Bake it straight from the fridge, adding extra time.
