Description

Delicious muffins featuring cottage cheese and blueberries for a high-protein, nourishing treat.


Ingredients

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup blueberries
  • 2 large eggs
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 cup vegetable oil
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare muffin tin by lining with liners or greasing with cooking spray.
  3. Mix wet ingredients in a large bowl until smooth.
  4. Add vanilla extract and vegetable oil, mixing until combined.
  5. Whisk dry ingredients in a separate bowl.
  6. Combine the wet and dry mixtures, stirring gently until just combined.
  7. Gently fold in blueberries.
  8. Divide the batter into muffin cups, filling three-quarters full.
  9. Bake for 20-25 minutes, testing for doneness with a toothpick.
  10. Cool muffins before serving.

Notes

For a vegan version, replace the eggs with applesauce and use a plant-based milk instead of cottage cheese.
