- 1 cup cottage cheese
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup blueberries
- 2 large eggs
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp vanilla extract
- 1/4 cup vegetable oil
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare muffin tin by lining with liners or greasing with cooking spray.
- Mix wet ingredients in a large bowl until smooth.
- Add vanilla extract and vegetable oil, mixing until combined.
- Whisk dry ingredients in a separate bowl.
- Combine the wet and dry mixtures, stirring gently until just combined.
- Gently fold in blueberries.
- Divide the batter into muffin cups, filling three-quarters full.
- Bake for 20-25 minutes, testing for doneness with a toothpick.
- Cool muffins before serving.
Notes
For a vegan version, replace the eggs with applesauce and use a plant-based milk instead of cottage cheese.
