Description

Delicious herb and garlic baked potatoes with crispy skin and fluffy insides, perfect for any meal.


Ingredients

  • 4 large Potatoes (Russet or Yukon Gold)
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic (freshly minced)
  • 2 tablespoons Fresh Herbs (such as rosemary and thyme)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly, then dry them with a kitchen towel.
  3. Poke holes in each potato with a fork, about 4-6 times.
  4. In a mixing bowl, combine olive oil, minced garlic, chopped herbs, salt, and pepper.
  5. Rub the herb and garlic mixture over the potatoes, coating them well.
  6. Place the potatoes on a baking sheet, spaced out for even baking.
  7. Bake for 45-60 minutes, or until tender when pierced with a fork.
  8. Serve hot, optionally topped with extra herbs or a dollop of butter.

Make-ahead tips: You can prepare the herb and oil mixture ahead of time. Avoid overcrowding the baking sheet for optimal cooking.
