- 2 tablespoons Olive Oil
- 4 cloves Garlic (freshly minced)
- 2 tablespoons Fresh Herbs (such as rosemary and thyme)
- Salt to taste

Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes thoroughly, then dry them with a kitchen towel.
- Poke holes in each potato with a fork, about 4-6 times.
- In a mixing bowl, combine olive oil, minced garlic, chopped herbs, salt, and pepper.
- Rub the herb and garlic mixture over the potatoes, coating them well.
- Place the potatoes on a baking sheet, spaced out for even baking.
- Bake for 45-60 minutes, or until tender when pierced with a fork.
- Serve hot, optionally topped with extra herbs or a dollop of butter.
