Description

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 avocado, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1 small red onion, finely chopped
  • ½ cup cherry tomatoes, halved
  • ½ cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Juice of 1 lime
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Marinate the shrimp: In a medium bowl, combine the shrimp, olive oil, lime juice, salt, and pepper. Let them marinate for about 10 minutes.
  2. Prepare the corn salsa: In a separate bowl, mix corn, red onion, cherry tomatoes, and avocado. Squeeze the juice of half a lime over and season with salt and pepper.
  3. Make the creamy garlic sauce: In a small bowl, combine Greek yogurt and minced garlic with a pinch of salt and a splash of water.
  4. Grill the shrimp: Preheat the grill or grill pan to medium-high heat and grill the shrimp for 2-3 minutes on each side.
  5. Assemble the bowl: Layer grilled shrimp, corn salsa, and drizzle with creamy garlic sauce.
