- 4 ears of corn
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1 cup fresh cilantro, chopped

Instructions
- Preheat your grill over medium heat and grill the corn for about 10 minutes until charred.
- Cool the corn slightly before cutting the kernels off the cob.
- Mix grilled corn, cherry tomatoes, red onion, and cilantro in a large bowl.
- Prepare the dressing by whisking lime juice, olive oil, salt, and pepper in a small bowl.
- Toss the salad with the dressing and serve immediately.

You can make the salad ahead of time, but add the dressing just before serving to maintain the crunch.
