Description

A vibrant and refreshing grilled corn salad bursting with fresh flavors from sweet corn, cherry tomatoes, and a zingy lime dressing.


Ingredients

  • 4 ears of corn
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your grill over medium heat and grill the corn for about 10 minutes until charred.
  2. Cool the corn slightly before cutting the kernels off the cob.
  3. Mix grilled corn, cherry tomatoes, red onion, and cilantro in a large bowl.
  4. Prepare the dressing by whisking lime juice, olive oil, salt, and pepper in a small bowl.
  5. Toss the salad with the dressing and serve immediately.

Notes

You can make the salad ahead of time, but add the dressing just before serving to maintain the crunch.
