Description

Deliciously marinated grilled chicken featuring rich flavors and a perfect char.


Ingredients

  • 2 1/2 to 3 lbs chicken meat (thighs, breasts, or drumsticks)
  • 1/2 cup mayonnaise
  • 1 1/2 tbsp Dijon mustard
  • 1/4 cup freshly squeezed lemon juice
  • 3 to 4 garlic cloves, minced
  • 2 tsp sea salt
  • Ground black pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp coriander
  • 1 tsp smoked paprika
  • 2 to 3 tbsp fresh, chopped dill

Instructions

  1. Prepare the Marinade: In a mixing bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, minced garlic, sea salt, black pepper, garlic powder, onion powder, coriander, smoked paprika, and dill until smooth.
  2. Marinate the Chicken: Place the chicken in a sealable plastic bag or a bowl. Pour the marinade over the chicken, ensuring each piece is coated evenly. Seal the bag or cover the bowl and marinate in the fridge for at least 1 hour, preferably overnight.
  3. Preheat the Grill: Set the grill to medium-high heat, ensuring it’s hot.
  4. Let it Rest: Remove the chicken from the refrigerator and allow it to sit at room temperature for about 15 minutes.
  5. Grill to Perfection: Discard the leftover marinade and grill for about 6-8 minutes per side or until the internal temperature reaches 165°F.
  6. Rest and Serve: Let the chicken rest for 5 minutes before serving.

Notes

For a lighter option, Greek yogurt can replace mayonnaise.
