Ingredients

- 2 1/2 to 3 lbs chicken meat (thighs, breasts, or drumsticks)
- 1/2 cup mayonnaise
- 1 1/2 tbsp Dijon mustard
- 1/4 cup freshly squeezed lemon juice
- 3 to 4 garlic cloves, minced
- 2 tsp sea salt
- Ground black pepper to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp coriander
- 1 tsp smoked paprika
- 2 to 3 tbsp fresh, chopped dill
Instructions
- Prepare the Marinade: In a mixing bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, minced garlic, sea salt, black pepper, garlic powder, onion powder, coriander, smoked paprika, and dill until smooth.
- Marinate the Chicken: Place the chicken in a sealable plastic bag or a bowl. Pour the marinade over the chicken, ensuring each piece is coated evenly. Seal the bag or cover the bowl and marinate in the fridge for at least 1 hour, preferably overnight.
- Preheat the Grill: Set the grill to medium-high heat, ensuring it’s hot.
- Let it Rest: Remove the chicken from the refrigerator and allow it to sit at room temperature for about 15 minutes.
- Grill to Perfection: Discard the leftover marinade and grill for about 6-8 minutes per side or until the internal temperature reaches 165°F.
- Rest and Serve: Let the chicken rest for 5 minutes before serving.
Notes
For a lighter option, Greek yogurt can replace mayonnaise.
