Description

Deliciously marinated grilled chicken kabobs featuring juicy chicken, crisp zucchini, and tender bell peppers, perfect for summer gatherings.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 medium zucchini, sliced
  • 1 bell pepper, cut into chunks (mixed colors)
  • 1 red onion, cut into wedges
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cut the chicken, zucchini, bell pepper, and red onion into bite-sized pieces.
  2. Whisk together olive oil, lemon juice, minced garlic, salt, and pepper in a large mixing bowl.
  3. Add the chicken and sliced vegetables to the marinade, tossing gently to coat. Let marinate for at least 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Thread the chicken and vegetables onto the skewers, alternating among them.
  6. Grill the kabobs for 10-15 minutes, turning occasionally until the chicken is done and vegetables are tender.
