- 1 medium zucchini, sliced
- 1 bell pepper, cut into chunks (mixed colors)
- 1 red onion, cut into wedges
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Cut the chicken, zucchini, bell pepper, and red onion into bite-sized pieces.
- Whisk together olive oil, lemon juice, minced garlic, salt, and pepper in a large mixing bowl.
- Add the chicken and sliced vegetables to the marinade, tossing gently to coat. Let marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the chicken and vegetables onto the skewers, alternating among them.
