Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with cheerful cupcake liners.
- Whisk together the flour, granulated sugar, cocoa powder, baking soda, and salt in a large mixing bowl.
- Combine the vegetable oil, buttermilk, eggs, green food coloring, vanilla extract, and white vinegar in another bowl.
- Gradually add the wet mixture to the dry ingredients and gently fold until combined.
- Fill each cupcake liner about two-thirds full with the batter.
- Bake for 18-20 minutes, and use a toothpick to check for doneness.
- Cool the cupcakes completely on a cooling rack before frosting with cream cheese frosting.
- Beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth for the frosting.
