Description

A delightful twist on classic cupcakes, these green velvet cupcakes blend rich cocoa with vibrant green hues, topped with creamy cream cheese frosting.


Ingredients

  • 1 cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 2 tablespoons green food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • Cream cheese (for frosting)
  • Softened butter (for frosting)
  • Powdered sugar (for frosting)
  • Vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with cheerful cupcake liners.
  2. Whisk together the flour, granulated sugar, cocoa powder, baking soda, and salt in a large mixing bowl.
  3. Combine the vegetable oil, buttermilk, eggs, green food coloring, vanilla extract, and white vinegar in another bowl.
  4. Gradually add the wet mixture to the dry ingredients and gently fold until combined.
  5. Fill each cupcake liner about two-thirds full with the batter.
  6. Bake for 18-20 minutes, and use a toothpick to check for doneness.
  7. Cool the cupcakes completely on a cooling rack before frosting with cream cheese frosting.
  8. Beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth for the frosting.
