- 2 cups cooked chicken, shredded
- 1 cup long-grain rice
- 1 can (10 oz) diced green chiles
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup chicken broth
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add chicken, cumin, garlic powder, salt, and pepper; sauté for about 5 minutes.
- Combine rice, green chiles, black beans, corn, chicken broth, and the chicken mixture in a large bowl.
- Pour the mixture into a greased casserole dish and spread it evenly.
- Top with shredded cheese.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Let it cool slightly before serving.
