Description

A comforting casserole bursting with flavors of green chiles, cumin, and melted cheese, perfect for weeknight dinners and festive gatherings.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup long-grain rice
  • 1 can (10 oz) diced green chiles
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup chicken broth
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add chicken, cumin, garlic powder, salt, and pepper; sauté for about 5 minutes.
  3. Combine rice, green chiles, black beans, corn, chicken broth, and the chicken mixture in a large bowl.
  4. Pour the mixture into a greased casserole dish and spread it evenly.
  5. Top with shredded cheese.
  6. Cover with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  8. Let it cool slightly before serving.

Notes

Make-ahead tips: Assemble the casserole in advance and refrigerate. Increase cooking time by about 15 minutes when ready to bake.
