Delicious Greek Chicken Stuffed Peppers filled with seasoned ground chicken, feta cheese, and rice, all wrapped in sweet roasted peppers.

- 4 bell peppers (red, yellow, or orange)
- 1 pound ground chicken
- 1 cup cooked rice (white or brown)
- 1 cup crumbled feta cheese
- 2 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup chopped fresh parsley
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the peppers by cutting off the tops and removing the seeds.
- Sauté the garlic in olive oil for about 30 seconds until fragrant.
- Brown the ground chicken with oregano, salt, and pepper for about 6-8 minutes.
- Mix in the cooked rice and crumbled feta until combined.
- Stuff the chicken mixture into each bell pepper.
- Bake covered with foil for 25-30 minutes, then remove foil and bake for an additional 10 minutes.
- Garnish with fresh parsley before serving.
Notes
Make ahead by assembling the peppers a day in advance and storing in the fridge. You can also use an air fryer for a quicker cooking option.
