Description

Delicious Greek Chicken Stuffed Peppers filled with seasoned ground chicken, feta cheese, and rice, all wrapped in sweet roasted peppers.


Ingredients

  • 4 bell peppers (red, yellow, or orange)
  • 1 pound ground chicken
  • 1 cup cooked rice (white or brown)
  • 1 cup crumbled feta cheese
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the peppers by cutting off the tops and removing the seeds.
  3. Sauté the garlic in olive oil for about 30 seconds until fragrant.
  4. Brown the ground chicken with oregano, salt, and pepper for about 6-8 minutes.
  5. Mix in the cooked rice and crumbled feta until combined.
  6. Stuff the chicken mixture into each bell pepper.
  7. Bake covered with foil for 25-30 minutes, then remove foil and bake for an additional 10 minutes.
  8. Garnish with fresh parsley before serving.

Notes

Make ahead by assembling the peppers a day in advance and storing in the fridge. You can also use an air fryer for a quicker cooking option.
