- 1 medium sweet potato, cooked and mashed
- 1/2 cup gluten-free breadcrumbs

- Salt and pepper to taste
- Olive oil for frying
- Fresh herbs (like parsley or cilantro) for garnish
Instructions
- Combine the cooked red lentils, mashed sweet potato, gluten-free breadcrumbs, chopped onion, minced garlic, cumin, paprika, salt, and pepper in a large bowl.
- Mix everything well until uniform.
- Shape the mixture into small patties, about 2-3 inches in diameter.
- Heat olive oil in a skillet over medium heat.
- Carefully place the patties in the skillet and fry them for about 4-5 minutes on each side until golden brown.
- Serve warm, garnished with fresh herbs.
Notes
You can prepare the mixture a day in advance and store it in the fridge. For a healthier option, bake these patties in the oven at 400°F for 20-25 minutes.
