A delightful summer appetizer featuring zucchini and heirloom tomatoes on crispy baguette with a creamy garlic spread.
Ingredients

- 1 large green zucchini
- 2 to 3 tbsp cooking oil (olive or avocado oil)
- Salt and black pepper to taste
- 1 large heirloom tomato
- 1/3 cup mayonnaise
- 2 to 4 cloves of garlic
- 2 tbsp fresh dill (chopped)
- 1/2 French baguette
Instructions
- Wash your zucchini thoroughly, then slice it into thin rounds, about ¼ inch thick.
- Toss the slices in a mixing bowl with the cooking oil, salt, and pepper.
- Heat your skillet over medium-high heat, then add the zucchini slices in a single layer.
- Sauté for about 3-4 minutes on each side until they turn golden and become tender.
- Remove from heat and set aside to cool slightly.
- Combine the mayonnaise, minced garlic, and chopped dill in a medium-sized mixing bowl. Mix well.
- Preheat your oven to 400°F (200°C) and slice the baguette into ½-inch pieces.
- Brush each slice lightly with oil and bake for 5-7 minutes.
- Spread a generous layer of the garlic mixture on top of the toasted baguette.
- Top with sautéed zucchini and arrange heirloom tomato slices artfully on top. Sprinkle extra dill over your creations.
- Serve immediately to enjoy them at their freshest!
Notes
Make the garlic mixture in advance for blended flavors. Consider personalization with feta or alternative toppings.
