Description

A delightful summer appetizer featuring zucchini and heirloom tomatoes on crispy baguette with a creamy garlic spread.


Ingredients

Scale
  • 1 large green zucchini
  • 2 to 3 tbsp cooking oil (olive or avocado oil)
  • Salt and black pepper to taste
  • 1 large heirloom tomato
  • 1/3 cup mayonnaise
  • 2 to 4 cloves of garlic
  • 2 tbsp fresh dill (chopped)
  • 1/2 French baguette

Instructions

  1. Wash your zucchini thoroughly, then slice it into thin rounds, about ¼ inch thick.
  2. Toss the slices in a mixing bowl with the cooking oil, salt, and pepper.
  3. Heat your skillet over medium-high heat, then add the zucchini slices in a single layer.
  4. Sauté for about 3-4 minutes on each side until they turn golden and become tender.
  5. Remove from heat and set aside to cool slightly.
  6. Combine the mayonnaise, minced garlic, and chopped dill in a medium-sized mixing bowl. Mix well.
  7. Preheat your oven to 400°F (200°C) and slice the baguette into ½-inch pieces.
  8. Brush each slice lightly with oil and bake for 5-7 minutes.
  9. Spread a generous layer of the garlic mixture on top of the toasted baguette.
  10. Top with sautéed zucchini and arrange heirloom tomato slices artfully on top. Sprinkle extra dill over your creations.
  11. Serve immediately to enjoy them at their freshest!

Notes

Make the garlic mixture in advance for blended flavors. Consider personalization with feta or alternative toppings.
