- 1 baguette, sliced
- 2 cups cooked beets, diced
- 1 cup cream cheese, softened
- 2 tablespoons garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (like dill or chives)
Instructions
- Preheat oven to 400°F (200°C).
- Prepare the sliced baguette on a baking sheet. Brush each slice with olive oil. Toast for 5-7 minutes until golden brown.
- Make the beet mixture by combining cream cheese, diced beets, minced garlic, lemon juice, and salt and pepper in a bowl. Mix until smooth.
- Assemble crostini by spreading the beet mixture on each toasted baguette slice.
- Garnish with fresh herbs and serve warm or at room temperature.
Notes
Make the beet mixture in advance and assemble right before serving for optimal crunch. Use an air fryer for quicker toasting.
