Description

Delicious salmon kabobs marinated with garlic and lemon, grilled to perfection and served with a creamy yogurt sauce.


Ingredients

  • 1 lb salmon fillets, cut into 12 inch chunks
  • 3 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • 2 tbsp fresh herbs (parsley or dill), chopped
  • Salt and pepper, to taste
  • 1 lemon, thinly sliced
  • 1 cup Greek yogurt

Instructions

  1. Prepare the marinade: In a large bowl, combine minced garlic, fresh lemon juice, olive oil, and chopped herbs, adding salt and pepper to taste. Whisk until all ingredients blend harmoniously.
  2. Marinate the salmon: Gently toss the salmon chunks in the marinade, cover, and refrigerate for at least 30 minutes.
  3. Preheat your cooking surface: Prepare your grill or broiler to a medium-high temperature.
  4. Skewer the ingredients: Thread the marinated salmon onto skewers, alternating with thinly sliced lemons.
  5. Cook: Place the skewers on the grill or under the broiler, cooking for approximately 5-7 minutes on each side.
  6. Serve: Remove from heat and serve hot with garlic yogurt sauce drizzled on top.

Notes

Feel free to marinate the salmon overnight for better flavor. You can substitute different fish like swordfish or shrimp.
