- 2 pounds baby potatoes
- 4 slices of bacon, chopped
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the grill to medium-high heat.
- Combine the baby potatoes, chopped bacon, ranch seasoning, olive oil, salt, and pepper in a large bowl.
- Prepare large pieces of aluminum foil, placing an equal amount of the potato mixture in the center.
- Create the packets by folding the foil and sealing the edges tightly.
- Grill the packets for about 20 to 25 minutes, until the potatoes are tender.
- Melt the cheese by opening the packets and sprinkling the shredded cheddar on top, then close them back for a couple of minutes.
- Garnish with fresh parsley before serving.
