- 1 tablespoon fresh lime juice
- For Toppings:
- 1 cup shredded sharp cheddar cheese (or pepper jack for an extra kick)
- ½ cup diced red onions
- ½ cup sliced jalapeños (optional)
- Fresh cilantro leaves
Instructions
- Make the Firecracker Sauce: In a small bowl, whisk together ¼ cup mayonnaise, 2 tablespoons sriracha sauce, 1 tablespoon honey, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, and 1 tablespoon fresh lime juice until silky smooth.
- Prep the Toppings: Dice the red onions, slice the jalapeños, shred the cheese, and roughly chop the cilantro. Set aside.
- Heat the Grill: Preheat your grill to medium-high heat (around 400°F).
- Grill the Hot Dogs: Place the hot dogs on the grill, cooking for about 5 to 7 minutes, turning occasionally.
- Toast the Buns: In the last 2 minutes of grilling, place the buns cut-side down on the grill.
- Assemble the Hot Dogs: Spread the Firecracker sauce inside each bun, add the grilled hot dog, and top with cheese, onions, jalapeños, and cilantro.
- Serve Immediately: Enjoy hot off the grill!
