Description

Delightful muffins featuring chewy oats and gooey chocolate chips, perfect for breakfast or a snack.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup rolled oats
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • ¼ cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or generously grease it.
  2. Whisk together the all-purpose flour, rolled oats, granulated sugar, baking powder, baking soda, and salt in a large bowl.
  3. In a separate medium bowl, whisk together the egg, milk, vegetable oil (or melted butter), and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Fold in the chocolate chips with a spatula.
  6. Divide the muffin batter evenly into the muffin cups, filling each about ⅔ full.
  7. Bake for 18-22 minutes, checking for doneness with a wooden skewer.
  8. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.
