- 1 cup peaches, diced
- Oil for frying
- 1 cup powdered sugar
- 2 tablespoons milk (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Whisk together the flour, baking powder, salt, and sugar in a large bowl.
- Mix the milk, egg, and vanilla extract in a separate bowl until smooth.
- Fold the wet ingredients into the dry ingredients until just combined.
- Gently fold in the diced peaches.
- Heat oil in a deep fryer or pot to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil and fry until golden brown, about 3-4 minutes.
- Transfer fritters to a paper towel-lined plate to drain.
- Mix powdered sugar, milk, and vanilla extract until smooth for the glaze.
- Drizzle the glaze over warm fritters before serving.
Notes
You can replace peaches with apples or blueberries. For a healthier version, try baking or air frying them.
