Description

A cozy and flavorful birria ramen that combines traditional Mexican flavors with Japanese ramen for a unique culinary experience.


Ingredients

  • 2 lbs beef chuck
  • 4 cups beef broth
  • 1 cup water
  • 3 dried guajillo peppers
  • 2 dried ancho peppers
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Ramen noodles
  • Chopped cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Combine the beef chuck, beef broth, and water in a large pot.
  2. Toast the guajillo and ancho peppers in a dry skillet over medium heat until fragrant.
  3. Remove the stems and seeds from the toasted peppers, and blend them with the onion, garlic, cumin, and oregano until smooth.
  4. Add the blended mixture to the pot and stir well to combine.
  5. Season with salt and pepper to taste.
  6. Simmer on low heat for about 120 minutes until the beef is tender.
  7. Shred the beef and return it to the broth.
  8. Cook the ramen noodles according to package instructions.
  9. Serve the ramen in bowls, ladling the birria broth over the noodles. Top with shredded beef, chopped cilantro, and lime wedges.

Notes

For best flavor, make the broth a day in advance and let it sit overnight in the fridge.
