Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chunks
  • 1 cup salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy removal of cookies.
  2. Cream together the softened butter, brown sugar, and granulated sugar with an electric mixer until smooth and fluffy—about 4 minutes.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. Whisk together the flour, cocoa powder, baking soda, and salt in another bowl, then gradually fold this dry mixture into the wet ingredients.
  5. Fold in the chocolate chunks until well combined.
  6. Scoop portions of dough onto the prepared baking sheet, spacing them about two inches apart, and press down slightly in the center.
  7. Fill each well with a dollop of salted caramel sauce.
  8. Bake for 10-12 minutes, until the edges are firm but the centers remain soft and gooey.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For chewier cookies, increase the brown sugar or add an additional egg yolk. Can be made ahead and refrigerated.
