Description

Delightful crispy Greek potatoes, seasoned with garlic, oregano, and lemon, perfect as a side dish for any meal.


Ingredients

  • 4 large potatoes (Yukon Gold or Russets)
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the potatoes into wedges, aiming for uniform sizes.
  3. Combine the potato wedges with olive oil, lemon juice, salt, pepper, oregano, and minced garlic in a large bowl.
  4. Toss thoroughly to coat every wedge in the marinade.
  5. Spread the potato wedges in a single layer on a lined baking sheet.
  6. Bake for 30-35 minutes, turning halfway through.
  7. Serve hot, garnished with fresh herbs if desired.

Notes

Make-ahead tips: Cut the potatoes a few hours in advance and place in cold water to prevent browning. For quicker cooking, use an air fryer set to 380°F (193°C) for about 25 minutes.
