- 1 head Cauliflower, cut into florets
- 1 head Broccoli, cut into florets
- 2 Carrots, sliced
- 1 cup Sharp Cheddar or Mild Mozzarella Cheese, grated
- 2 cups Whole Milk or Almond Milk
- 4 tablespoons Butter
- 4 tablespoons Flour
- Salt, to taste
- Pepper, to taste
- 1/2 cup Bread Crumbs (optional)
Instructions
- Preheat your oven to 375°F (190°C) and prepare for the deliciousness that is about to unfold.
- Lightly steam the cauliflower, broccoli, and carrots for 4-5 minutes until they are just tender.
- In a saucepan, melt butter over medium heat. Stir in flour to create a roux, lightly cooking it for about a minute.
- Gradually whisk in the milk, stirring constantly for 4-5 minutes until the mixture thickens.
- Add grated cheese into the saucepan and stir until melted and smooth, seasoning with salt and pepper.
- In a large bowl, combine the steamed vegetables with the velvety cheese sauce.
- Transfer the mixture to your baking dish and sprinkle with bread crumbs if desired.
- Bake for 25-30 minutes until the top is bubbly and golden brown.
- Allow the casserole to cool slightly before serving.
Notes
Feel free to swap in your favorite vegetables or add cooked chicken for extra protein. This dish can also be made ahead of time.
