Ingredients

- 2 cups rotisserie chicken, shredded
- 9 oz cheese tortellini
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup fresh spinach
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat the olive oil in a large pot over medium heat.
- Sauté the onions and garlic until fragrant and translucent.
- Add the chicken broth and bring to a gentle bubble.
- Cook the tortellini according to package instructions for 5–7 minutes.
- Stir in the chicken, heavy cream, and Italian seasoning.
- Incorporate the fresh spinach until just wilted.
- Season to taste with salt and pepper.
- Serve and enjoy!
Notes
Store leftovers in an airtight container for up to three days. This soup can also be frozen for up to three months—just leave out the spinach until reheating.
