Description

A comforting casserole filled with tender chicken, creamy sauce, and fresh spinach, perfect for family gatherings or weeknight meals.


Ingredients

  • 23 cups cooked and shredded chicken
  • 4 cups fresh spinach (or 1 package frozen spinach, thawed and drained)
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg (optional)

Instructions

  1. Begin by cooking and shredding your chicken.
  2. Sauté spinach in a pan until just wilted or prepare frozen spinach by thawing and draining it thoroughly.
  3. In a mixing bowl, blend the cream cheese, sour cream, garlic, onion, and seasonings until smooth.
  4. Preheat your oven to 375°F (190°C) and grease a casserole dish.
  5. Layer the shredded chicken in the dish followed by the sautéed spinach.
  6. Pour the creamy sauce over the top and mix gently.
  7. Sprinkle the mozzarella and Parmesan cheeses over the top.
  8. Bake uncovered for 25-30 minutes until bubbly and golden.
  9. Let cool for 5-10 minutes before serving.

Notes

Make ahead and refrigerate for up to 24 hours before baking. Can be customized with additional ingredients.
