- 2–3 cups cooked and shredded chicken
- 4 cups fresh spinach (or 1 package frozen spinach, thawed and drained)
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of nutmeg (optional)
Instructions
- Begin by cooking and shredding your chicken.
- Sauté spinach in a pan until just wilted or prepare frozen spinach by thawing and draining it thoroughly.
- In a mixing bowl, blend the cream cheese, sour cream, garlic, onion, and seasonings until smooth.
- Preheat your oven to 375°F (190°C) and grease a casserole dish.
- Layer the shredded chicken in the dish followed by the sautéed spinach.
- Pour the creamy sauce over the top and mix gently.
- Sprinkle the mozzarella and Parmesan cheeses over the top.
- Bake uncovered for 25-30 minutes until bubbly and golden.
- Let cool for 5-10 minutes before serving.
