A vibrant and refreshing salad featuring sweet crab meat, hard-boiled eggs, and a colorful array of vegetables, complemented by a homemade Louie dressing.

- 1 1/2 lbs King Crab (or cocktail shrimp)
- 6 large eggs
- 10 cups chopped romaine lettuce (or butter lettuce)
- 1 large avocado
- 1 cup cherry tomatoes
- 6 medium cocktail cucumbers
- 10 small radishes (or 2 watermelon radishes)
- 1 small red onion
- 2 tbsp capers
- 1 large lemon
- 1 bundle asparagus spears (about 20 spears)
- Olive oil, sea salt, and pepper (to taste)
- 1 recipe Homemade Louie Salad Dressing
Instructions
- Prepare the Louie Dressing by whisking together mayonnaise, ketchup, lemon juice, Worcestershire sauce, and a pinch of salt and pepper until smooth.
- Hard-Boil the eggs: Place them in a saucepan, cover with cold water, boil, then let sit covered off heat for 10-12 minutes before transferring to an ice bath.
- Prepare the crab or shrimp by shelling the crab carefully or peeling and deveining shrimp.
- Wash and dry the lettuce, then chop into bite-sized pieces.
- Slice the cherry tomatoes, cucumbers, and radishes, and thinly slice the red onion. Blanch asparagus briefly until tender-crisp.
- Combine all prepared ingredients in a large mixing bowl, drizzle with Louie dressing, and toss gently.
- Serve on plates or in bowls, garnished with lemon wedges or fresh herbs if desired.
Notes
Make the dressing a day in advance for enhanced flavor. Use fresh, seasonal ingredients for the best taste.
