Description

A vibrant and refreshing salad featuring sweet crab meat, hard-boiled eggs, and a colorful array of vegetables, complemented by a homemade Louie dressing.


Ingredients

  • 1 1/2 lbs King Crab (or cocktail shrimp)
  • 6 large eggs
  • 10 cups chopped romaine lettuce (or butter lettuce)
  • 1 large avocado
  • 1 cup cherry tomatoes
  • 6 medium cocktail cucumbers
  • 10 small radishes (or 2 watermelon radishes)
  • 1 small red onion
  • 2 tbsp capers
  • 1 large lemon
  • 1 bundle asparagus spears (about 20 spears)
  • Olive oil, sea salt, and pepper (to taste)
  • 1 recipe Homemade Louie Salad Dressing

Instructions

  1. Prepare the Louie Dressing by whisking together mayonnaise, ketchup, lemon juice, Worcestershire sauce, and a pinch of salt and pepper until smooth.
  2. Hard-Boil the eggs: Place them in a saucepan, cover with cold water, boil, then let sit covered off heat for 10-12 minutes before transferring to an ice bath.
  3. Prepare the crab or shrimp by shelling the crab carefully or peeling and deveining shrimp.
  4. Wash and dry the lettuce, then chop into bite-sized pieces.
  5. Slice the cherry tomatoes, cucumbers, and radishes, and thinly slice the red onion. Blanch asparagus briefly until tender-crisp.
  6. Combine all prepared ingredients in a large mixing bowl, drizzle with Louie dressing, and toss gently.
  7. Serve on plates or in bowls, garnished with lemon wedges or fresh herbs if desired.

Notes

Make the dressing a day in advance for enhanced flavor. Use fresh, seasonal ingredients for the best taste.
