Description

Delicious cowboy cookies packed with oats, chocolate chips, nuts, and coconut for a hearty treat.


Ingredients

  • 1 cup oats
  • 1 cup chocolate chips
  • 1 cup crunchy nuts (walnuts or pecans)
  • 1/2 cup shredded coconut
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar in a large mixing bowl until light and fluffy, about 3-4 minutes.
  3. Beat in the egg along with the vanilla extract until just combined.
  4. Mix together the oats, flour, baking soda, salt, chocolate chips, nuts, and coconut in another bowl.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring gently.
  6. Drop rounded tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the cookies appear golden brown.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For even baking, rotate the baking sheet halfway through the baking time. You can also chill the dough before baking for extra flavor.
