- 1 cup oats
- 1 cup chocolate chips
- 1 cup crunchy nuts (walnuts or pecans)
- 1/2 cup shredded coconut
- 1 cup flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar in a large mixing bowl until light and fluffy, about 3-4 minutes.
- Beat in the egg along with the vanilla extract until just combined.
- Mix together the oats, flour, baking soda, salt, chocolate chips, nuts, and coconut in another bowl.
- Gradually incorporate the dry ingredients into the wet mixture, stirring gently.
- Drop rounded tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the cookies appear golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For even baking, rotate the baking sheet halfway through the baking time. You can also chill the dough before baking for extra flavor.
