- 8 oz Pasta (Fusilli or Penne)
- 1/4 cup Fresh Lime Juice
- 1/4 cup Fresh Coriander (Cilantro)
- 1/4 cup Olive Oil
- Salt & Black Pepper to taste
- 1 cup Cherry Tomatoes, halved
- 1 cup Cucumbers, diced
- 1 cup Bell Peppers, diced
- Optional Protein: Grilled chicken, shrimp, or chickpeas
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente, following package instructions. Drain and rinse under cold water.
- Prepare the dressing: In a large mixing bowl, whisk together cooled pasta, fresh lime juice, olive oil, salt, and black pepper.
- Add fresh ingredients: Incorporate chopped coriander, sliced cherry tomatoes, diced cucumbers, and chopped bell peppers. Stir gently to combine.
- Fold in protein (optional): If adding grilled chicken, shrimp, or chickpeas, fold them in at this point.
- Chill: Cover the bowl and let the salad chill in the refrigerator for at least 30 minutes.
- Serve: Serve chilled as a refreshing side dish or satisfying lunch.
