Description

A refreshing and vibrant pasta salad featuring zesty lime, fresh coriander, and a medley of colorful vegetables, perfect for summer gatherings.


Ingredients

  • 8 oz Pasta (Fusilli or Penne)
  • 1/4 cup Fresh Lime Juice
  • 1/4 cup Fresh Coriander (Cilantro)
  • 1/4 cup Olive Oil
  • Salt & Black Pepper to taste
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Cucumbers, diced
  • 1 cup Bell Peppers, diced
  • Optional Protein: Grilled chicken, shrimp, or chickpeas

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente, following package instructions. Drain and rinse under cold water.
  2. Prepare the dressing: In a large mixing bowl, whisk together cooled pasta, fresh lime juice, olive oil, salt, and black pepper.
  3. Add fresh ingredients: Incorporate chopped coriander, sliced cherry tomatoes, diced cucumbers, and chopped bell peppers. Stir gently to combine.
  4. Fold in protein (optional): If adding grilled chicken, shrimp, or chickpeas, fold them in at this point.
  5. Chill: Cover the bowl and let the salad chill in the refrigerator for at least 30 minutes.
  6. Serve: Serve chilled as a refreshing side dish or satisfying lunch.
